In exceptional years, the grapes from the best plots of the Joseph Cattin vineyards are harvested when they are overripe, several weeks after the start of the official harvest.
The aromatic exuberance and the exaltation of flavors obtained through the concentration and development of noble rot characterize this exceptional wine.
A botrytis-driven wine, sweet while also balanced with honey and lemon acidity.
The spicy character of Pinot Gris is overtaken by this sweetness, giving a textured wine with a final burst of richness.
